Ok. So the Dirty Bird started losing power, started running rough, started blowing light gray smoke / steam, and even has the milky colored oil. So, I'm thinking HEAD GASKET!. So I take it off and the gasket is INTACT. I will post pics of the head & the gasket. But what gives? I'm confused now. Please help!

a warped head will cause the problem described and not necessarily show up as a blown head gasket. everything is fine until the engine gets hot and is run hard.....then the leak shows up. could also be a crack somewhere...

Take out the valves and look down in between the holes for cracks. Thats where mine cracked on one of my old TCs, right between an intake/exhaust valve.
