Where would i find a place for the probe for my temp gauge? dont want to remove stock one.

You could try to get one of the Dave Goddfry cast aluminum T-stat housings. They have a boss big enough to drill and tap for a sending unit.
The alternative mmight be to fab an insert into one of the lines to the heater core
