After doing some suspension work, my wheel offsets have become a bit radical and stick about 1.5" to 2" past the fender. Do we have any kind of fender flare that can be grafted on to put some of this under cover? Or do I have to think outside of the box on this one?

A widebody kit used to exist specific for Tbirds, but I don't remember who made it. Looked mean though, IMSA style.
Maier Racing makes a mustang kit, but it is VERY labor intensive, especially for an application specific kit.
There's a guy online at HairyGlass (sp?) who does body panels for the birds, maybe he'd do a one-off flare?
If it was mine, i'd be cutting and rolling, welding and filling, sanding and painting...

I've seen a few tools on HotRod TV that make rolling fender flairs a snap.
Another option would be to try to find a metal fabricator in your area. Believe it or not they are sometimes in more close proximity than one would imagine. They maybe listed under a different reference such as custom motorcycle fabricators,hot rod builders, artist, metal sculptures ect... Just have to look around.
I know my local art gallery there are a few people that make sculptures from stone, metal and just about anything they can get their hands on.
Schools are another good source. They'll even do the work for free just to teach the students.

IMSA style flares on TC would look sweet I bet... Now I'm thinking about it...

I think if you move the wheels and tires out to the edge of the fender wells it would look cool. But definitely different.

I think it could use some tweaking to make it look better.
My choice would be to slam/lower the suspension. Then 18" wheels that are about 15" wide with 6" lip. Top it all off with low profile tires.
