Bad Headgasket? (LONG)

Hi,
Some of you may remember a previous post I had about adding a temp gauge on a Tbird I bought for 400 bucks that wouldn't pass smog.
I've started to follow the advice given to me and so far have done cap&rotor, plugs and plug wires, I would have done the 02 sensor today also but they were out of stock. The #1 plug look kind of old like it was way overdue for a change and maybe saw a hint of preignition at some point, all the other plugs had some carbon and looked like they were in rich running cylinders. I still havent checked for excessive fuel pressure which may be the cause or it could be dirty injectors, those are my two guess at this point anyway, and the car does smell a little rich. So after everything is back together with new ignition parts I start er up with no probs, but after a few minutes the motor stumbles a bit but catches itself and goes back to normal, I checked plug wire connections real quick and then went back in car and started to rev it to see if it would return to idle normally or stutter or anything again. I noticed that it doesn't want to rev real high or if I floor it in neutral the turbo whines some, don't know if this is normal behavior or not, is it? Anyway no more stumbles or anything so I get out of car and notice brown water running down the driveway in a thin little stream, I look and its originating from the tailpipe. When this dried it left a rust stain on the cement. This is when the motor is still fairly cool and b4 doing anything else I shut it off, checked the oil for milkshake and found none, then installed the temp gauge. Restarted it and there was still steam but not much water and I let the car idle for about 30 mins while watching the temp gauge, after 30 mins with the occasional revving it finally started to move close to the 250 mark on the gauge, its an auto meter and b4 that it says 210 so I don't know exactly where I was at but decided that was hot enough for me, the fan never came on during all of this. It never spitted out as much water but still gave a nice steam bath. Also for what its worth the coolant is nice and green. So besides the fact that I was stupid to rev it a lot while it wasn't really warmed up I have a couple of questions.

1) Think the headgasket is bad?
2) Anyone see a downside to me cutting the wires to the fan and using an adjustible temp switch to turn on the fan at about 200?

Head gasket might be bad. Does she overheat while you drive her?

As for the fan ? I think that's a great idea seeing as my birds tend to run a little on the high side.

check the fan switch (under dash on passenger side). if the one track (towards the center) is burnt up, then that is your problem. you also might want to wire up a manual fan switch for emergancies.

I tried to edit to clarify but couldn't so I'll do it here. When in neutral I could get it to rev high but if I gave it enough throttle to do that then I would hear the turbo kick in. I'm used to my other non turbo cars which could be redlined in neutral with only a little throttle, so thats the part I wasn't sure about if it was normal.

I haven't driven it since I put the gauge in and can't really drive it since it has no tags yet. But I'm guessing idling in my driveway is close to stop and go conditions and considering how long it took to get kind of hot (30 mins) I'm guessing that with a working fan it would not overheat.

Ok I'll check that tomorrow, thanks. Oh I should have mentioned this is an 84 Tbird.

I would suggest you not cut the fan wires, but find the problem with why the fans don't come on. Letting it get to 250 is not good.
I would also pull the codes and do a fuel pressure check on it.

If you did the plugs and haven't driven it, why do they look old?

The plugs that came with the car looked old cuz I just bought the car and now I'm doing all the tune up stuff I usually do when I buy a car. It hasn't been driven since I put new plugs in it today, just idled a lot. I plan to do the fuel pressure and ECU code reading.

DO NOT just cut the fan wires! If you do, the fans wont come on with the A/C like they should. Just tap into the existing wiring with an adjustable fan thermostat. Like Pete said, try to find the root cause of the fans not coming on, as it could affect other systems.... i.e., a bad ECT could cause the fans not to run, and also be the source of running rich.

Ok I'll hold off on messing with the fan, I'll check the fan switch under the dash and see if I can pull a code. Previous owner pulled the AC compressor out and when I turn the switch on the dash the fan doesn't come on. Is there a particular wire I should check on since the AC was removed?
