I recently purchased a 140 mph speedometer. Are these just plug n play or is there a conversion process I'll need to do to install it? Any help is appreciated

P&P as Pete said. If you dont mind taking it apart, you can easily reset the odometer to match the correct miles on your car.
Where do you get the 140 speedos?
Ebay, they are obsolete from Ford Motorsports. Rarely one can be found in a JY gauge cluster. They were a Motorsports item.
You can buy an overlay, and there is a link on c ougarnuts, that shows ypu how to add a diode to recalibrate the speedo to work with the new face. Its not super accurate, but close enough
Its a capacitor you change on the circuit board, not a diode. They can be calibrated to be very accurate (+/- 1 to 2 mph) if you know what you are doing.
Do we have anyone that is willing to modify one on here? and get it that accurate? I want to do one but don't have the stuff out the best soldering talent.
The electrical mod is very simple. You just replace one capacitor with another. The cap is very easy to get to at the edge of the circuit board. The art comes in replacing the face and playing with the calibration weights in the meter movement. It is very time consuming and delicate work, and requires electrical test equipment (a calibrated signal generator). I used to do these for people several years ago, but dont really have the time these days.
